Master the Ikijime/Shinkei Jime Technique In a Few Easy Steps

1. The Ikipik: The first and most important part of the entire shinkei jime process is precision. Start with an Ikijimi Spike, your go-to tool for a humane and effective dispatch. Identify the iki point (brain cavity) on your catch, and with a firm push, spike the fish to euthanize it instantly. This method ensures minimal stress on the fish, preserving the quality of the flesh right from the start.
2. Use the Corer to Access the Spine: Once the fish is spiked, it’s time to access the brain cavity. Take the T-shaped coring tool, twist and the brain cavity at an angle to gain access to the spine. *TIP: Use the Ikipik to easily clean out the corer after use.
3. Insert Spinal Wire: Now, choose the correct spinal wire for your fish, insert it into the hole you made in the brain cavity, run it along the entire spinal column. You’ll notice the fish may visibly shake or change color this is a sign that you’re doing it right. Give the wire a pull back and forward a few times completely severing all the nerves completely relaxing the muscles of the fish.
4. Stainless Steel Blood Knife: Next, it’s time to bleed your catch. For Tuna and other large species, use the stainless steel blood knife to quickly and safely cut the lateral vein.
5. Stainless Steel Knife: Now use the knife to cut the gills and gut the fish, ready to pack it in with salt ice slurry, keeping it as fresh as possible.
